The wider question is why regulators are still having to reconstruct product distribution after hundreds of illnesses have already occurred.

A jalapeño is simple.

Its supply chain was not.

The outbreak investigation begins with fresh peppers from a grower in Sinaloa, moves through a distributor, and then branches outward through wholesalers, restaurants, manufacturers, retailers and prepared foods.

By the time public-health investigators assembled the picture, 345 illnesses had been reported across 27 states.

Thirty-six people had been hospitalised.

This is why food traceability should be judged in hours, not press releases.

The distributor does not appear to have supplied jalapeños directly to grocery stores.

Instead, some manufacturers used the peppers to produce other foods, which were then distributed into retail channels.

Downstream recalls eventually covered products ranging from pico de gallo and guacamole to dips, sandwiches and other prepared foods.

The pepper changed form.

The risk did not.

That transformation is precisely where traceability becomes difficult for consumers.

Someone may never have purchased a whole jalapeño.

They may have eaten it inside a restaurant meal or bought it as one ingredient in a prepared product carrying a completely different brand.

The epidemiological investigation shows the scale of the problem.

Among 191 people interviewed, 177, or 93%, reported eating at a Mexican-style restaurant before becoming ill.

Traceback subsequently identified a common grower supplying the implicated distributor as the likely source.

The immediate public-health machinery is working.

Products have been recalled.

Companies have changed suppliers.

Consumers have been warned.

Affected peppers have been removed from implicated restaurant chains.

But the broader lesson comes earlier.

A modern food system should be able to answer three questions rapidly:

Where did this ingredient come from?

Where did it go?

What did it become?

If regulators, distributors and retailers cannot answer all three quickly, the recall starts after the exposure.

The outbreak will eventually end.

The data problem should not be allowed to remain.
